Nicole Gibbs showed us how to make her favorite healthy snack, avocado toast. Gibbs, who will return to the tour next week since taking time off from tennis to rehab her knee and wrist injuries, has made some lifestyle changes, nutrition in particular. She has been on a very strict diet for the past couple of weeks to help eliminate inflammation and make her a healthier, fitter athlete. Some of the “rules” of her diet include avoiding red meat, fried foods, vegetable oils, alcohol, caffeine, and white grains.
Gibbs recently hired Mike Guevera (Coach Mike G) to help guide her through "a very comprehensive lifestyle change.
"When I started consulting with Mike, I was pretty undisciplined in terms of my diet," said Nicole. "I tried to eat generally healthy but I wasn't particularly educated at to what that meant."
